Ingredients

From The Lobster Mobsters Chowder Kit:

  • 1 bottle bar clams with juice
  • 1 package PEI chowder seasoning
  • 1 lb lobster meat
  • 1 lb raw scallops

Additional ingredients:

  • 7 medium potatoes, peeled and diced
  • 3 large carrots, diced
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 4 cups (1 L) 3.25% milk
  • Salt, to taste
  • Fresh cracked black pepper, to taste
  • 3 tbsp butter, to finish

How to Make East Coast Seafood Chowder

1. Make the Chowder Base

In a large pot over medium heat (about level 4 on a standard stove dial), melt 4 tablespoons of butter. Whisk in the flour and cook for 3 to 5 minutes, stirring constantly. This roux will thicken the chowder and build flavour — just be careful not to let it brown.

2. Add the Liquids and Seasoning

Strain the bar clams and reserve the clam juice. Slowly whisk the clam juice into the roux until smooth.

Allow the milk to sit briefly at room temperature so it isn’t cold, then gradually whisk it in. Stir in the PEI chowder seasoning and bring the mixture to a gentle simmer.

3. Season Lightly Early

Add a pinch of salt to help season the base and the vegetables as they cook.

4. Cook the Vegetables

Add the diced potatoes and carrots. Keep the chowder at a gentle simmer for about 20 minutes, stirring occasionally, until the potatoes are very soft.

5. Thicken Naturally

Remove roughly two potatoes’ worth from the pot, mash or blend until smooth, then stir them back in. This is a classic technique that creates the chowder’s signature thickness without making it heavy.

6. Add the Seafood

Lower the heat.

  • Add the scallops and cook about 3 minutes, just until opaque.
  • Add the lobster meat and warm it through gently.
  • Add the clams last and cook for 1 minute.

7. Finish and Adjust Seasoning

Turn off the heat and stir in 3 tablespoons of butter for richness and shine. Add fresh cracked black pepper and adjust salt if needed.

8. Let It Rest

Allow the chowder to rest for 5–10 minutes before serving. It will thicken slightly as it sits and the flavours will come together beautifully.

Serve and Enjoy

Ladle the chowder into warm bowls and enjoy with crusty bread, oyster crackers, or a simple salad. Rich, comforting, and full of premium seafood, this chowder is everything an East Coast classic should be.
