Mussels with Coconut and Basil

1 tbsp olive oil
1 tbsp grated fresh ginger
1/4 tsp red pepper flakes
3 cloves garlic, finely chopped (I always use more – who doesn’t?)
1 can coconut milk
1/2 cup julienned carrot (and whatever other veggies I’ve got, green onions, celery, orange or yellow peppers)
1/2 cup julienned red bell pepper
1/4 cup slivered fresh basil
2 tbsp soy sauce
1 tbsp fresh lime juice
2 tsp slivered lemon peel
1/4 tsp salt
48 mussels, rinsed and scrubbed
1 tbsp chopped fresh cilantro
Combine oil, ginger, red pepper flakes and garlic in a deep frying pan. Cook over medium heat until fragrant. Stir in the next 9 ingredients (coconut milk to salt). Bring mixture to a boil.
Add mussels and cover with a tight fitting lid. Cook until mussels open – about 7-10 minutes.
Ladle mussels and broth into a bowl. Serve topped with cilantro and baguette slices.
Mussels In Coconut Broth

Steam the mussels, while they’re steaming, render down about 300g of pancetta in a saucepan. Then add the cooked, shelled mussels, a can of coconut milk, and 3-4 cloves of finely minced garlic. Bring to a boil then lower the heat to a simmer and let reduce for 7-9 minutes, then add a handful of fresh chopped parsley, the juice of a half a small lemon (juice of a quarter of a large lemon), and pepper to taste. Easy but still flavorful! If your an east coaster that’s not afraid of some heat, add a pinch to a quarter teaspoon of crushed red pepper flakes when adding the mussels.
